Description

This is our Heritage Bronze whole turkey, ready for your Thanksgiving feast! These turkeys come from Tanjo Farms, our primary pork producer. They love the Bronze breed and feel that it gives a better flavour than a traditional white turkey. These birds have a long history, having been brought over from England in the 18th century. Bronze turkeys are known to have a more intense, almost gamey flavour which is in part because of the slower growth rate of these birds. This slower growth rate contributes to darker meat overall, particularly in the legs and thighs.  We are pleased to be able to offer these turkeys to our customers and hope that they show what a heritage breed can bring to your table.

**Please note: Because of the nature of these birds, we cannot guarantee a specific size for any orders that are taken. We have decided to put a range from 15-20 lbs to allow for some variations in the sizing. Once you’ve put your order in, we will get in touch about what your ideal size would be. We will try our best to deliver your turkey as close to your preferred range as possible. The price is based on a 20lbs turkey. Once the orders are processed, we will send out a refund for the difference in weight for the turkey you received. If you have any questions, please don’t hesitate to get in touch with us**

Heritage Bronze Turkey Cooking Recipe:

Bronze Turkeys are a little more forgiving on moisture thanks to their richer, fattier meat, and the dark meat stays juicy as it cooks. Because the meat is denser, they can take a little longer to cook, so we’d recommend using a thermometer to check the internal temperature, primarily from the thigh area, to check if the bird is cooked through (CFIA recommends 82c-85c or 179f-185f taken from the thickest part of the turkey). Slow roasting is also a great way to cook these turkeys to let the flavour develop fully. We’ve listed a more tranditional approach to roasting a turkey below but please don’t feel obligated to follow this.

Rub the skin generously with butter, season with salt, pepper and herbs, and baste regularly throughout cooking. Cook at 375f/190c for 20 minutes per kg plus 70 minutes.

  • For a 6.5kg (15lbs) Turkey: 3 hours 40 minutes
  • For a 9 kg (20lbs) Turkey: 4 hours, 50 minutes

 

Once roasted, rest the bird well (30-40 minutes total) before carving to let the juices settle.
